I thought I’d share with you a simple recipe for pea and ham soup that I’ve been using lately. For preference I’d make it with what are known in Australia as ‘Blue Boilers’ referring to whole dried peas, but since they are both hard to come by lately for some reason, and need soaking overnight, I’ve begun using split peas which taste close enough to the original to be acceptable… and make the cooking process *so* much easier! :)

So… ingredients:

2 x ham hocks (for preference) tho at a push bacon hocks or even bacon bones would do
4 x cups green split peas (*not* lentils… though you could try it as a variation… tastes ok but it isn’t the same)
2 x fair sized leeks washed, chopped fairly finely
2 x largish carrots, chop finely to taste.
6 litres water… or more.
1 tsp or so of both whole peppercorns and allspice.
(wrap them in a muslin bag if you don’t like the crunchy feel of them. Personally I *like* to leave them loose in the soup… gives it a special ‘edge’ when you bite them occasionally!!)
balance seasoning once cooked – remember the ham might be salty so check first… too late afterwards!

Method.

Simple… chuck it all in a large enough pot, bring to the boil, cook on simmer for 2 – 3 hours *stirring* now and then to prevent burning and adding water if the mix solidifies… i.e. starts to look/feel too thick for your tastes!

Note: If you have a slow boiler it would be ideal… throw ingredients in, go to work, come home and eat.

Remove ham bones and meat using slotted spoon or similar. Strip meat from bones. Shred meat and reserve, give bones to dog… or bin.

If you like soup au naturale… mix shredded meat back in and serve hot with thick buttered toast or rolls.

If you prefer a smoother soup… blend all or most of the soup prior to returning the shredded meat (I use a hand held blender – takes 30 secs).

I think it’d hard to find as tasty and simple a recipe that uses mostly fresh foods *and* is as easy to make!!

Ok, before you start… I apologise for the length of this post. I got a bit carried away :)

Even so, there’s really nothing quite like a big bowl full of pea and ham soup to warm the cockles of your heart of a cold winters day. As a matter of fact, I was virtually brought up on the stuff in my early years. Luckily for me, when I was at primary level (specifically Twyn Infants School, and later Twyn Junior School, both in Caerffili) I used to go to my grandmothers house for lunch… there were no school dinners for me matey boy!! :)

My grandmother would never have made a classic chef, nor did she ever go in for cordon bleu cookery as my mother did. What she *did* do, and do extraordinarily well, was to produce wholesome, filling and above all tasty meals for her family for almost 75 years until she was simply too old to manage! Bear in mind by the way, that a large portion of this period was ‘post-war’ when both food and money were still tight over most of the country, and perhaps especially so in South Wales.

Some of the dishes she’d serve up were standards in the family for years. She’d make pies and tarts with fruit my grandfather grew in their tiny garden. We’d have apple, rhubarb, gooseberry, blackcurrant etc. as the seasons dictated. She’d even walk the hedgerows when she could collecting natures gifts of blackberries, wild strawberries and the like, and when nothing else was available, would happily produce tarts and pies made with lemon curd, or mincemeat! She didn’t just cook by the way, her elderberry and elderflower wine was like nectar!

Getting back on topic, one of the most memorable things my grandmother cooked regularly, were her cakes. She’d make Welsh cakes by the bucket and as fast as she would throw them off the bake-stone we’d grab them and gobble them down at speed, totally ignoring the possibility of indigestion from the uncooled delicacies in favour of the certainty of enjoying those warm tasty sugar sprinkled confections…mmm.

She could also make a *mean* fruit cake. I have never tasted fruit cakes like them before or since. My mother bless her tried and tried but she could never manage to replicate whatever it was my grandmother did… and I’m embarrassed to say we told her so many times… awww. Unfair really because she *did* try over and over again.

The thing about my grandmothers version was that it was exceptionally moist, yet firm… in texture perhaps something like a fruity banana or carrot cake (hard to imagine I know) but with the sort of flavour combinations from the fruit mixture that could make your taste buds revolve and burst with joy. I’ve tried many times to make fruit cakes but as nice as they’ve been, *I* can’t replicate that flavour and texture. Maybe my grandmothers old gas cooker was less efficient and so cooked better.. who knows? I don’t, but I wish I did! Ahh… those memories and tastes come flooding back as I type… and I still love fruit cake!!

Strangely, I really don’t know what meals she cooked during summer. I suppose this is because I was so young at the time and maybe because most of summer was spent at home being fed by my mother. By the time I went back to school it was September and we were getting towards the ‘stick-to-your-ribs’ food time again. :)

Still I especially remember with affection her stews, the lamb chops, the mashed potatoes, the over boiled cabbage, and the rest even down to the piece of cod and threepenn’orth of chips I had each Fridays, because Friday was washing day and she had no time to cook.

Yet above all, it was her pea and ham soup that defines my memory of her cooking. I would arrive at her door at lunchtime and on the table, waiting for me, would be a plate of soup with a big piece of ham sitting in the middle. Next to the plate, would be a big mug… of soup. After the soup and the soup, I’d have… more soup. I used to drink it by the bucket. No wonder I had no friends… I doubt I was fit to sit next to for days afterwards!! :)

I loved my grandmother, tho I can’t ever remember telling her so. I’m not sure I ever even told her how grateful I was that she cooked for me for all those years or how much I enjoyed the meals she provided. But maybe, if she’s up above glowering down at me typing (she was a world class glowerer my gran… she could have glowered for Wales if they’d let it into the Olympics as a sport!!) she’ll catch a flavour of it from this… and know that I still produce pea and ham soup in her honour… and if the kids don’t like it well hard luck. All the more for me :)

As we drove up to school this morning we were listening to Classic FM, as we do. Kids were wittering on about listening to the local pop station but suddenly up came The Moldau by Smetana. I think of all the music I’ve listened to over the years this probably speaks to me more closely that any other.

In essence the ‘story’ of the piece which only lasts some 10 – 12 minutes is the life history of the river Vltava from its birth as in two small streams, one cold, one warm which join and flow through the countryside down to the Elbe.

Having said this, somehow I see it as more than that. To me it has two deeper meanings. For a start I hear it as an allegory on the story of life from the beginnings as an innocent child playing, learning and growing; working through adolescence into maturity then reaching fulfilment at the end of its course as it joins the greater stream of time. Then there is the way two people start as individuals, meet and become a couple, again growing and developing as one until they too melt into the greater stream of time melding their joint lives into the greater whole.

I would never claim to be an expert in music but for me this piece says it all. I’ll repeat what I’ve said in the past, if I get a funeral when it’s my turn to drift off into that great river I’d like some or all of this to be played… it’s only 12 minutes go to whoa so even the services that get held at a gallop might accommodate this? :)

Was on my way to drop one of the kids off at her Guides meeting. While on a divided road downhill doing 70 in traffic *in rain* I was overtaken by a guy on a motor bike. From the size I’d say it was 250cc or less. He was doing at least 90 swerving between the two lanes of cars on a greasy road.

I was driving along and in my mind I could see one of the cars he was tailgating in between swerves having to brake and both he and his passenger discovering what free flight was like… until they landed on the road under the wheels of a car.

It was one of the most amazingly bad pieces of driving I’ve seen in years… yet he lived, no doubt to do it again some other day… or not.

Strange day yesterday

The wife stayed home to work to get work stuff done ‘without interruption’. For the last few weeks she’s been under pressure to get a major report out because this is the time of year when bonuses and salary increases take precedence. I can see the point. With constant interruptions it’s easy to fall behind on essential tasks so if you *can* do it why not?

As usual I just carried on doing what I do.. but more so. Over the past few days I’ve continued to ‘improve’ and have finally got back to clearing up the house. It’s been a few *months* of general lassitude and inactivity but downstairs at least is slowly regaining a semblance of normality and is becoming livable again. Still loads to do as usual, but it’s looking better and that alone is encouraging.

Apart from the general clearing of the house I spent some of the day sorting out the IT which will be a load off my mind once it’s done.

Now I’m *sure* there was more I was going to write… but the kids sitting next to me have driven all thoughts out of my mind. Maybe it’s time they went to school! :)

I’ll write more later no doubt.

At long last, I’ve started rationalising our IT configuration which has been in a dreadful (and expensive) mess for some time. Again this month we’ve reached the download limit of our Internet account (12 Gb) and the ISP has ‘shaped’ the speed down to 64K which is totally unacceptable. As part of a general shakeup I’ve started looking round for a new ISP which will allow us a greater limit but at comparable speeds.Along with this I’ve started the long overdue process of consolidating our website, domain and hosting arrangements.

For many years or sites were hosted by a company called ‘Aussie Hosts’ and I was quite happy with them. Then the owner decided he wanted a life and sold off the business. Then new owners were quite gung ho about developing the business but their pricing made it harder and harder to justify the expense for private sites that don’t earn an income. So… I decided I’d move wholesale to a new provider and opened a reseller account. That worked partially, except I never got round to moving all the sites. This was partly because I simply don’t know how to and partly because I decided the new provider didn’t have a level of technical support I felt was necessary for someone like me.

However (yes I know this is boring but I’m writing it as much for me as for you :) ) the original provider took over a company called Jumba who *do* have plans that suited my needs. I called them, and discovered that ‘technical support’ is now shared with the original guys. So, to cut a long story slightly shorter, I opened a new account with them and asked them to transfer all of the sites from *both* the old packages and the ‘interim’ provider. Once that’s done I’ll shift the domain registration to the one registrar, close down the old accounts… and all will be in the one place.

Ok I know this sounds like a lot of fuss about nothing but it really isn’t. Some of the sites are on packages that are far too big for them, others are on packages far too small and the costs for both are fixed! Moving them to my own ‘reseller space’ means I can adjust their space and bandwidth allotment according to their needs. Apart from that I’ll be left with one fixed regular cost instead of the bitty bills that come in haphazardly. The idea is that I’ll be able to budget plan and modify on the fly.

There are downsides of course. All mail accounts will be lost and have to be recreated which will annoy my father who already lost all his mail when I accidentally deleted his mailbox a few weeks ago… oops. The same will happen again more or less so I’ll need to make sure I recreate it as soon as possible! :)

So. The new account is open. The support mail has gone in. Now I’m sitting and waiting for the transfer/migration to be carried out and whilst *that* is going on I’m off looking for a new ISP.

It’s an interesting time. Ah shaddap… I know *I’m* interested at least! :)

Ok I know I’m blowing around like the weather we’ve been having but we really really did have a lovely morning. Started as usual in the dark with the usual visit to the rail station to drop the wife off for her trip to ‘The City’ and her daily doings.

Then I turned the car round to come back and by then it was like a different day. The sun was up and out! Yes there were clouds around black and threatening but there was *sun* – Spring is coming!! Yayyyy….. !!!!

Back to the house, called the kids… no arguments!! They got ready without quarreling and we left without a fight! A strange day… strange day indeed!! Got to the school dropped them off and came on home.

Travelling down the road I was faced with **the** most perfect brilliantly coloured rainbow I have ever seen. The definition was glorious and deeply intense… and I didn’t have a camera with me. Typical. :)

Actually, even though I wasn’t able to record it for you to share, I wasn’t too sad. It was enough for me to have seen it, and know the world was good again.

Hey – maybe the effects of the cold and flu have finally left me and I’m finally getting back to normal!! Hmmm… I wonder what ‘normal’ is like??

Grubby Greer

She had a go at Steve Irwin after he was dead.. and is now hacking at Princess Diana calling her a ‘devious moron’!! Well pardon me… Germaine Greer isn’t a particularly popular person herself. If Greer had a hundredth of the people who loved Diana loving her instead she might get less flak… but she doesn’t. People just don’t like her.

Not that she cares – from the perspective of this hangover from the 1960′s all she wants is her name in the papers. It’s time she was put out to pasture and comment left to people with less vitriol and more sense.

So we all get up, wife goes to work, I jolly the kids along because today is the day the eldest goes back to school. However we have to visit the Orthodontist first to let him give her a check up first.

Still, I make her get ready for school… after all it’s just a few extractions.

We go, he sees her, he says she could have the rest of the day off if she wanted… gaaahhhh!!!

He had a look and said she’s recovering well enough but she still mustn’t eat solid food until the end of the week. I figure she can have mashed spuds and
onion gravy tonight and maybe a shepherd’s pie or similar tomorrow… something soft that doesn’t need chewing.

In case you are wondering she won’t eat stews, soups etc. which is what people with sore mouths tend to eat. All she’s had to eat this week is mush… yoghurt’s, custard… and noodles!

Just to round off the week, she’s not to play contact sports etc just in case there is contact with her jaw – even accidentally… so no Tae-Kwon-Do tonight.

She can still play flute which is a bit of a downer for her as she hates practice :)

Otherwise all is healing up nicely. :)
